Recipe-Mommy’s Sizzling Brownie

Ingredients

Refer to the earlier recipe : “Mommy’s browni-licious” to make the Brownie and keep aside.

For the topping :

  • Vanilla Ice Cream

  • Chocolate sauce for garnish

Method

  • Take a pan and put a pinch of butter in it.

  • Now place the square piece of brownie and crisp it on both sides.

  • Place the hot brownie piece on the dessert plate.

  • Put a scoop of vanilla ice cream and pour the chocolate sauce.
    Serve immediately.

Recipe-Oats Date Soft Cookies

Ingredients

  • Cake Flour (Maida) – 1 cup

  • Baking Powder – 1 heaped teaspoons

  • Pinch of salt

  • Lime juice – ½ tsp

  • Oats (Cooking Oats) – 1 cup

  • Sugar(natural Brown) – 1 cup

  • Butter – ¾ cup

  • Vanilla Butter essence – 2 tsp

  • Chopped Dates – ¾ cup

  • Chopped Nuts (Optional) – ½ cup

  • Egg – 1

Method

  • Mix dates with the flour to separate pieces. Keep aside.

  • Stir together flour, baking soda and salt.

  • With beater, cream butter and sugars; beat in egg and vanilla until blended.

  • With a wooden spatula stir in flour mixture.

  • Add reserved date, nuts, lime juice mixture and oats; stir to mix well.

  • Scoop a spoonful or as desired this into the baking tray.

  • Bake in medium heat (about 200 degrees Celsius) or low flame for about 30 minutes.

  • Time may vary depending upon the size of oven, so please prick a tooth pick to check if toothpick comes out dry after 20 minutes.

  • Garnish with hazelnut spread & sprinkle hundreds & thousands.

  • Serve warm or cold as desired. No refrigeration required.

Kesari Gulgule (Saffron Fried Balls)

Ingredients

  • Whole Wheat Flour – 2 cups

  • Sugar – 2 cups

  • Saffron Strands – 20

  • Cardamom Powder – 1 Tsp.

  • Milk – ¾ cup

Method

  • Take Wheat Flour, water sugar saffron strands and cardamom powder and mix it all up well in a bowl.

  • Make a pouring consistency thick batter.

  • Add water if necessary.

  • Leave the batter for a while till sugar blends well in the batter.

  • Take Oil in a frying pan and heat well.

  • Now with a spoon scoop small portions of the batter and deep fry over slow flame.

  • Serve hot or cold as desired.

Kesari Chumchum (Saffron Cottage Cheese Logs)

Ingredients

  • Milk – 1 Litre

  • White distilled vinegar – few drops

  • Water – 3 glasses

  • Sugar – 2 glasses

  • Cardamom Powder – 1 tsp

  • Kesar (Saffron) – 10 strands

Method

  • Take the milk and bring to boil in a wok.

  • Add a few drops of vinegar till milk curdles. Remove from flame.

  • Drain water away and wash the cottage cheese with normal water. Drain water with hand so very little water remains in cottage cheese.

  • Now knead the cottage cheese till it is smooth and creamy.

  • Make rectangular shaped pieces of the cottage cheese and keep aside.

  • Take water in the pan, and add sugar, saffron and cardamom to it and bring it to boil.

  • Put the cottage cheese logs in this boiling sugar syrup and cover tight and boil for about 15-20 minutes.

  • Then open the lid and remove the logs gently and place them in a dish.

  • Garnish with strands of saffron and cardamom and serve chilled.

Oats Choco-Chip Muffin

Ingredients

  • Cake Flour (Maida) – 1 cup

  • Baking Powder – 1 heaped teaspoons

  • Baking Soda – 1 tsp.

  • Pinch of salt

  • Lime juice – ½ tsp

  • Oats (Cooking Oats) – ½ cup

  • Sweetened Condensed Milk – ½ can

  • Cooking oil – ¾ cup

  • Vanilla Butter essence – 2 tsp

  • Choco-chips – ½ cup

  • Milk (Cold) – ½ cup

Method

  • Grease the individual muffin mould or muffin tray with butter and sprinkle some flour and keep ready.

  • Take condensed milk, oil, vanilla, milk and blend together with hand blender.

  • Mix flour, Oats, baking powder, salt, baking soda and blend well again.

  • Mix the choco-chips gently and fold the muffin mixture gently.

  • Scoop a spoonful or as desired this into the individual muffin mould or muffin tray.
