Anjeer Kulfi with Khajoor (Date) bites

Ingredients

  • Milk – ½ Litre

  • Fresh Cream – 1 Litre

  • Condensed Milk to taste

  • Cardamom Powder – 1 tsp.

  • Kesar(saffron) – 10 strands

  • Dried Figs chopped finely – ½ cup

  • Dates mashed – 1 cup

  • Nuts – ½ cup

  • Corn Flour – 1 tsp.

Method

  • Heat the Milk and Cream together adding condensed milk as per desired sweetness.

  • Bring to boil then lower the flame.

  • Add the saffron, cardomom powder, figs and keep boiling on low flame until the mixture condenses and begins to thicken a bit.

  • Now dissolve corn flour in 2 tablespoons cold milk, then slowly pour into the above mixture stirring constantly.

  • The kulfi mixture will thicken even more.

  • Remove from flame, and put in desired moulds to freeze. (about 8 hrs.)

For Date Bites :

  • Take chopped dates, put over low flame in a pan and add few drops of water to soften the dates.

  • Once softened then blend and mash it together with a spoon, and add roasted dry fruits to it, and makes small squares of desired size.

  • Freeze for about 2 hrs in refrigerator.

  • Serve chilled with date bites.

Recipe-Peachilicious made from fresh Peaches

Peach-ilicious

Ingredients

  • Peach Flavoured Jelly – 1 packet

  • Whipping Cream – 1 cup

  • Water – 1 cup

  • Peaches for garnishing – 2

Method

  • Boil the water and pour the jelly packet and stir well till the jelly dissolves completely.
  • Allow to cool a bit, then add cream and stir well.

  • Put in mould and refrigerate it for about 6 hours for the pudding to set.

  • Serve chilled with fresh or canned peaches as desired.

Rich Christmas Pudding

Ingredients

  • Cake Flour (Maida) – 1 cup

  • Baking Powder – 1 heaped teaspoon

  • Baking Soda – 1 tsp.

  • Pinch of salt

  • All Spice Powder – 2 heaped teaspoons

  • Oats (Cooking Oats) – 1 cup

  • Sweetwned Condensed Milk – 1 can

  • Cooking oil – 1 cup

  • Vanilla Butter essence – 1 tsp

  • Milk (Cold) – ½ cup

  • Figs Softened and chopped – ½ cup

  • Dates Softened and chopped – ½ cup

  • Dried Peach chopped – ½ cup

  • Prunes – chopped – ½ cup

  • Walnuts Chopped – ½ cup

Method

  • Grease the baking dish with butter and sprinkle some flour and keep ready.

  • Take all condensed milk, oil, vanilla, milk and blend together with hand blender.

  • Mix flour, Oats, baking powder, salt, All Spice powder, baking soda and blend well again.

  • Add all nuts and dry fruits in this mixture and softly mix together with the spatula.

  • Pour this into the baking dish.

  • Bake in medium heat (about 200 degrees Celsius) or low flame for about 30 minutes.

  • Serve warm with fresh crème or ice cream as desired.

Sabudana Kheer (Sago Pudding)

Ingredients

  • Milk – 1 Litre

  • Fresh Cream – 1 Litre

  • Condensed Milk to taste

  • Cardamom Powder – 1 tsp.

  • Kesar(saffron) – 10 strands

  • Almonds, Cashews chopped finely – ½ cup

  • Sago (Sabudana) – ½ Cup.

Method

  • Take a thick bottomed pan and put a pinch of ghee and Sauté the sabudana (sago).

  • Pour Milk and Cream together adding condensed milk as per desired sweetness.

  • Bring to boil then cook on low flame.

  • Add the saffron, cardamom powder, chopped nuts and keep boiling on low flame until the mixture condenses and begins to thicken a bit.

  • Remove from flame, and put in desired Dish.

  • Serve chilled, garnish with fresh fruits or Dry Fruits.

Oats Cinnamon Cake with Chocolate Custard

Ingredients

  • Cake Flour (Maida) – 1 cup

    Baking Soda – 1 tsp.

  • Pinch of salt

  • Cinnamon Powder – 2 heaped teaspoons

  • Oats (Cooking Oats) – 1 cup

  • Sweetwned Condensed Milk – 1 can

  • Cooking oil – 1 cup

  • Vanilla Butter essence – 1 tsp

  • Milk (Cold) – ½ cup

  • Hersheys Choclate Frosting – 2 teaspoons

  • Fresh Cream – ½ cup

  • Cinnamon Sugar – 1 tsp.

Method

  • Grease the baking dish with butter and sprinkle some flour and keep ready.

  • Take all condensed milk, oil, vanilla, milk and blend together with hand blender.

  • Mix flour, Oats, baking powder, salt, cinnamon powder baking soda and blend well again.

  • Pour this into the baking dish.

  • Bake in medium heat (about 200 degrees Celsius) or low flame for about 30 minutes.

  • Time may vary depending upon the size of oven, so please prick a tooth pick to check if toothpick comes out dry after 20 minutes.

  • For Custard : Whip the cream to soft peaks and add in it the Hershey’s frosting and then sprinkle this custard over the warm cake.

  • Garnish with Cinnamon Sugar and Serve warm or cold as desired.
