Caramellicious
Ingredients
-
Fresh Cream – 2 cups
-
Fresh Milk – 1 cup
-
Cinnamon Powder – 1tsp.
-
Sugar – 1 cup
-
Eggs – 4
Method
-
Take milk, cream, sugar (1/4 c) and cinnamon and bring to boil.
-
Remove from gas and allow it to cool.
-
Take eggs and blend together with vanilla essence. Keep aside.
-
Take a flat based dish and sprinkle with the rest of the sugar and a few drops of water.
-
Hold this dish on gas and allow the sugar to char into brown color.
-
Then just dip the base of this dish in cold water for 5 seconds so the charred sugar hardens like a candy.
-
Pour the cooled milk & Cream mixture with eggs and blend together.
-
Now pour this over the dish with caramelized sugar and steam for about 15-20 minutes.
-
Refridgerate the pudding and when serving first pour it upside down so the caramel syrup apprears on the top.
-
Serve chilled.

Kulfi-licious Elaichi-Kesar Kulfi (Saffron Ice Cream)
Ingredients
Method
-
Heat the Milk and Cream together adding condensed milk as per desired sweetness.
-
Bring to boil then lower the flame.
-
Add the saffron, cardamom powder, chopped nuts and keep boiling on low flame until the mixture condenses and begins to thicken a bit.
-
Now dissolve corn flour in 2 tablespoons cold milk, then slowly pour into the above mixture stirring constantly.
-
The kulfi mixture will thicken even more.
-
Remove from flame, and put in desired moulds to freeze. (about 8 hrs.)
-
Serve chilled, garnish with fresh fruits or whipped cream.

Date Walnut Cake (Veg)
Ingredients

Cake Flour (Maida) – 1 cup
-
Baking Powder – 2 heaped teaspoons
-
Pinch of salt
-
All Spice Powder – 2 heaped teaspoons
-
Dates (Khajoor) Crushed – 1 cup
-
Walnuts (Akhrot) – 1 cup
-
Sweetened Condensed Milk – 1 can
-
Cooking oil – 1 cup
-
Vanilla essence – 1 teaspoon
Method
-
Grease the baking dish with butter and sprinkle some flour and keep ready.
-
Take dates in a pan, and put a teaspoon of water and cook on slow until the dates have softened, crush with the spoon to make a coarse paste of the date.
-
Take all condensed milk, oil, vanilla dates paste and blend together with hand blender.
-
Mix flour, baking powder, salt, all spice powder & chopped walnuts and blend well again.
-
Pour this into the baking dish.
-
Bake in medium heat (about 200 degrees Celsius) or low flame for about 30 minutes.
-
Time may vary depending upon the size of oven, so please prick a tooth pick to check if toothpick comes out dry after 20 minutes.
